Founded sometime between the first accidental barrel of Vin Jaune and the third glass of Savagnin, the Jura Research Dept. is a highly unofficial laboratory dedicated to the most important questions in natural science:
Why does a wine taste better after spending six years and three months under a mysterious veil of yeast?
Can oxidative ageing be used to explain most life decisions?
And is it still “sampling” if the flask contains 12.5% alcohol?
Operating from an undisclosed cellar somewhere between Arbois, Pupillin, L’Étoile and Château-Chalon, the department’s field researchers specialise in the study of sous voile development, ouillé versus non-ouillé behaviour, spontaneous cellar conversations, and the long-term psychological effects of opening a clavelin “just to check the evolution.”
